Florida Chicken And Rice - cooking recipe

Ingredients
    Mazola spray
    2 Tbsp. oleo
    2 Tbsp. bell pepper
    2 Tbsp. onion
    2 c. chopped up chicken
    6 oz. wild rice, cooked
    1/2 c. light mayonnaise
    1 can (16 oz.) French-style green beans, drained
    1 can (10 3/4 oz.) condensed cream of celery soup
    1/2 c. water chestnuts
    1/4 tsp. salt
    pepper to taste
    2 to 3 Tbsp. lemon juice
    1 small can sliced mushrooms
    1 c. Cheddar cheese, shredded
Preparation
    Spray 2-quart casserole dish with Mazola.
    Preheat oven to 350\u00b0.
    In large nonstick skillet melt oleo and saute onion and bell pepper.
    Put onion mixture in a large bowl and add cooked chicken, cooked wild rice, mayonnaise, green beans, soup, water chestnuts, mushrooms, salt, pepper and lemon juice.
    Mix.
    Dump into casserole dish and bake at 350\u00b0 for 25 to 30 minutes.
    Top with cheese and bake 5 minutes more.
    Serves 8.
