Pasta With Fresh Tomatoes - cooking recipe

Ingredients
    4 large ripe tomatoes, peeled, seeded, chopped
    1 large onion, sliced and separated into rings
    3 Tbsp. olive oil
    2 red or green sweet peppers, cut into strips
    2 Tbsp. fresh chopped oregano
    1/2 tsp. salt
    1/4 tsp. red pepper
    1 Tbsp. tomato paste
    1 tsp. sugar
    grated Parmesan cheese
    1 tsp. vinegar
    8 oz. cooked pasta
Preparation
    Drain tomatoes in colander.
    Saute onions, peppers, oregano, salt and pepper in olive oil until crisp-tender.
    Stir in tomato paste, sugar, vinegar and tomatoes.
    Heat through but do not boil. Serve over hot pasta.
    Top with Parmesan cheese.
    Makes 4 servings.
