Sole Amandine(4 Servings) - cooking recipe

Ingredients
    1 1/2 lb. sole fillets
    1/4 c. sliced almonds
    2 Tbsp. butter or margarine
    1 tsp. finely grated lemon peel
    juice of 1 lemon (about 4 Tbsp.)
    1/8 tsp. white pepper
Preparation
    Rinse fish; pat dry.
    In large skillet over high heat, cook almonds, stirring constantly to prevent burning, until lightly toasted, about 2 minutes.
    Remove almonds; set aside.
    Reduce heat to medium.
    Add butter.
    When bubbling, add fish and cook 1 to 2 minutes on each side or until fish flakes easily with fork. Transfer to a platter.
    Sprinkle with lemon peel, lemon juice and white pepper.
    Top with toasted almonds.
