Ma'S Bran Muffins - cooking recipe

Ingredients
    4 c. All-Bran cereal
    1 c. boiling water
    1/2 c. cooking oil
    2 1/2 tsp. baking soda
    2 eggs, beaten
    1 c. sugar
    2 1/2 c. flour
    1 tsp. salt
    2 c. buttermilk
    raisins (optional; you can add, if desired)
Preparation
    Pour boiling water over 1 cup of bran cereal and let stand. Mix sugar, oil and eggs and alternate with buttermilk and sifted dry ingredients.
    First, add bran mixture, then remaining bran. Cover tightly and store in refrigerator for a minimum of 12 hours or a maximum of 6 weeks.
    Preheat oven to 400\u00b0 and let mixture thaw (approximately 25 minutes).
    Grease muffin tins and spoon mixture into tins full 2/3 full.
    Bake for 18 minutes.
    For smaller muffins, bake for 20 to 25 minutes.
    Makes 24 muffins, depending on size.
    Great for breakfast!
