Potato Soup Supreme - cooking recipe
Ingredients

6 potatoes
2 stalks celery (optional)
10 slices bacon, fried
1 large onion, chopped
2 heaping Tbsp. flour
Preparation

Peel and boil potatoes in a minimun of water.
If you wish, chop up and add celery.
Chop up bacon to fry and add a large chopped onion; fry with the bacon.
Brown bacon well and also the onions.
Drain off all the grease and then put back 4 tablespoons of bacon grease.
Add flour and make a roux.
Mash the potatoes in the cooking water or drain off and use milk or part milk.
Add the roux to the mashed potatoes.
Salt and pepper to taste.
Return bacon and onions to soup.
