Ingredients

1 large grated zucchini
1 small peeled and grated potato
3 green onions, chopped fine
2 Tbsp. flour
1/4 tsp. black pepper
1 Tbsp. margarine
1 Tbsp. Parmesan cheese
Preparation

Combine all ingredients, except margarine and cheese.
Melt one tablespoon margarine in nonstick skillet over moderate heat. Add zucchini mixture and cook until golden brown around the edges, 6 to 7 minutes.
Place a large plate over the skillet and invert zucchini mixture onto it.
Add remaining margarine to skillet. Melt.
Slide pancake back into skillet.
Cook, uncovered, until firm.
Sprinkle with cheese.
