Ingredients

2 c. sifted flour
3 tsp. baking powder
2 c. minus 2 Tbsp. milk
1/3 c. melted shortening
2 eggs, separated
2 Tbsp. sugar
1 1/4 tsp. salt
Preparation

Heat waffle iron until it is smoking hot.
Sift together the flour, baking powder, sugar and salt.
Combine the yolks, milk and shortening.
Add liquid ingredients to dry ingredients all at once; mix well.
Beat egg whites until stiff; fold in gently into batter. Bake until steaming stops and waffles are golden.
