Zucchini Bread - cooking recipe
Ingredients

1 c. oil
2 c. sugar
3 eggs
3 c. flour
1 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
1/4 c. coconut (optional)
2 tsp. vanilla
1/2 c. chopped walnuts (optional)
3 c. grated zucchini, including rind
Preparation

Mix oil, sugar and eggs together well; add remaining ingredients.
Bake 1 hour at 350\u00b0 in two greased 9 x 5-inch loaf pans.
If zucchini is very large, peel and take out seeds.
