Chicken And Sausage Pileau - cooking recipe

Ingredients
    1/2 chicken
    1 lb. smoked sausage, sliced
    1 medium onion
    2 1/2 c. rice
    salt to taste
    pepper to taste
    1 tsp. cooking oil
Preparation
    Boil chicken about 45 minutes or until done.
    Cool; remove from bone.
    Set aside in bowl.
    Cut sausage into pieces.
    In large pot, combine oil and sausage.
    Brown, stirring occasionally.
    Add onion; simmer about 5 minutes.
    Add 1/2 cup water.
    Cook on medium heat about 15 minutes.
    Add salt, pepper, chicken and 4 cups water.
    Bring to boil; add rice.
    Cook on medium 15 minutes, then simmer for 15 to 20 minutes longer, or until rice is done.
