Broccoli Crab Bisque(Serves 6 To 8) - cooking recipe

Ingredients
    1 c. sliced leeks
    1 c. sliced mushrooms
    1 c. fresh or frozen (thawed and drained) chopped broccoli
    1 clove garlic, minced
    1/4 c. butter
    1/4 c. all-purpose flour
    1/4 tsp. dried thyme, crushed
    1/8 tsp. pepper
    1 small bay leaf
    3 c. chicken broth
    1 c. light cream
    3/4 c. = 3 oz. shredded Jarlsberg or Swiss cheese
    1 (6 oz.) pkg. frozen crabmeat, thawed and drained
Preparation
    In a 3-quart saucepan, cook leeks, mushrooms, broccoli and garlic in butter until crisp-tender.
    Blend in flour, thyme (1/8 teaspoon salt, optional), pepper and bay leaf.
    Add chicken broth and cream all at once.
    Cook and stir until thickened and bubbly. Cook and stir 1 minute more.
    Add cheese.
    Stir until cheese is melted.
    Add crabmeat; heat through.
