Corn Relish - cooking recipe
Ingredients

6 pt. sweet corn (cut from cob)
2 Tbsp. salt
3 diced onions
1 head celery, diced
2 c. white sugar
1 pt. vinegar
4 peppers (red and green)
1 tsp. mustard seed
1 pt. water
Preparation

Combine all ingredients
in a large nonaluminum kettle. Bring to a boil.
Reduce
heat.
Simmer
uncovered
30
to
40 minutes until vegetables are tender.
Pack into hot sterilized jars leaving 1/2 inch headspace.
Seal; cool completely.
