Tarragon Chicken Breasts - cooking recipe

Ingredients
    3 chicken breasts, boned, halved and skinned
    2 Tbsp. butter
    1/4 c. flour
    salt and pepper
    1 Tbsp. chopped shallots or onions
    1/4 c. dry white wine
    1 tsp. chopped fresh tarragon or 1/2 tsp. dried tarragon
    1/4 c. chicken broth
Preparation
    Sprinkle chicken with salt and pepper and dredge in flour; reserve remaining flour.
    In large skillet heat butter, add chicken and brown on both sides.
    Transfer to a heated platter. Add shallots to skillet and saute briefly.
    Add wine.
    Cook liquid over high heat until nearly evaporated.
    Add reserved flour and make a thick paste.
    Sprinkle with tarragon and stir in chicken broth.
    Return chicken to skillet, cover and cook until tender, about 25 minutes.
