Apricots With Ricotta - cooking recipe

Ingredients
    1 c. part-skim Ricotta cheese
    1/4 c. sifted powdered sugar
    1 tsp. grated orange rind
    3 Tbsp. Amaretto, divided
    1 tsp. vanilla extract
    2 (16 oz.) cans unsweetened apricot halves, drained and divided
    fresh mint sprigs (optional)
Preparation
    Combine the Ricotta cheese, powdered sugar, orange rind, 2 tablespoons Amaretto and vanilla in container in an electric blender or food processor; top with cover and process until smooth.
    Transfer to a bowl and set aside.
