Vegetables And Rice - cooking recipe

Ingredients
    1 c. brown rice, uncooked
    1 c. ready to serve reduced sodium fat-free chicken broth
    1 2/3 c. water
    2 tsp. reduced calorie margarine
    1 c. chopped onion
    1 c. chopped green pepper
    1 (8 oz.) can sliced mushrooms, drained
    1 Tbsp. low sodium soy sauce
    1/8 tsp. salt
    1/8 tsp. pepper
Preparation
    Combine first 3 ingredients in a saucepan; bring to a boil. Cover; reduce heat and simmer 50 minutes or until moisture is absorbed.
    Melt margarine in a heavy skillet.
    Add water chestnuts and mushrooms; cover and simmer 5 minutes.
    Add soy sauce, salt and pepper and stir in rice.
    Yields 6 servings (158 calories, 10% from fat, per 1 cup serving).
