Pumpkin Cheesecake - cooking recipe
Ingredients

1 1/2 c. graham cracker crumbs
2 Tbsp. honey
1 Tbsp. oil
2 eggs
3 egg whites
8 oz. soft Neufchatel cheese
1 tsp. vanilla
12 oz. part-skim or lite Ricotta cheese
1/2 c. plain nonfat yogurt
1 (15 oz.) can pumpkin
3/4 c. sugar
1/4 tsp. nutmeg
1/4 tsp. cinnamon
Preparation

Combine the graham cracker crumbs, honey and oil.
Mix well and press into a 9-inch pie pan.
In a mixing bowl, beat together the eggs and egg white until foamy.
Add all other ingredients. Beat until smooth and creamy.
Pour into the crust and bake at 350\u00b0 until slightly browned and firm in the center, about 45 minutes.
Yields 10 servings.
