Beet Pickles - cooking recipe

Ingredients
    beets
    1 c. water
    1 c. vinegar
    2 c. sugar
    1 Tbsp. pickling spice
    pinch of salt
Preparation
    Cook beets whole with peeling and stems on.
    Peel and cut as desired; leave whole, slice or cut in quarters.
    Bring water, vinegar, spices and salt to a boil; add beets.
    Bring back to a boil, then place beets in sterilized jars and seal.
    May use canned beets.
