Latkes A La Cohn - cooking recipe

Ingredients
    4 medium Idaho potatoes
    1 Spanish or Bermuda onion
    3 eggs
    1 small clove garlic, minced, or garlic powder
    1/2 c. plain dry bread crumbs
    1/2 tsp. baking powder
    1 tsp. salt
    pepper to taste
    1/4 tsp. paprika
    cooking oil
    applesauce or sour cream
Preparation
    Peel potatoes and cut into chunks.
    Peel onion and cut into small pieces.
    Break one egg into blender; add potatoes and onion. Blend until smooth.
    Empty into a colander to get rid of some of the liquid, then pour into a large bowl.
    Add remaining two eggs, garlic, bread crumbs, baking powder and salt.
    (Taste batter or first pancake to test for salt.)
    Add pepper and paprika.
    Stir well.
    The batter should be thick enough so that it will hold its shape and won't run off a tablespoon.
    If not, add more bread crumbs.
