Brian Bentley'S Savory Spinach And Rice Soup - cooking recipe
Ingredients

1/4 c. olive or vegetable oil
1 large onion, chopped
1 (10 3/4 oz.) can tomato puree
1 (10 oz.) bag fresh spinach, washed and trimmed
1 qt. chicken broth
1 medium tomato, peeled and diced
1/4 c. uncooked rice
1 tsp. dried oregano leaves
1 tsp. Tabasco sauce
1/2 c. minced chives or green onions
Preparation

In large saucepot, heat oil.
Add onion and cook 5 minutes or until soft, but not browned.
Add tomato puree, spinach, broth, tomato, rice, oregano and Tabasco sauce.
Cover and simmer 30 minutes or until rice is tender.
Stir in chives.
