Chicken With Black Beans And Yellow Rice - cooking recipe

Ingredients
    1 (10 oz.) yellow rice mix
    1 tsp. oil
    4 boneless skinless chicken breasts
    1 medium onion
    2 garlic cloves, minced
    juice of 1 lime
    1/2 c. orange juice
    2 (15 oz.) cans black beans, rinsed and drained
    1 c. low sodium chicken broth
Preparation
    Prepare rice. Set aside. Heat oil and add chicken. Cook 3 minutes each side until browned. Remove, reserving drippings in skillet. Set aside. Saute onion and garlic in hot drippings, 3 to 4 minutes. Add orange juice, stirring to loosen particles from bottom of skillet. Stir in beans and broth. Add chicken and bring to boil. Reduce heat and simmer until done. Serve over rice.
