Zucchini Bread - cooking recipe

Ingredients
    3 eggs, beaten
    2 c. sugar
    1 c. oil
    1 tsp. vanilla
    2 c. grated zucchini (drain with a little salt and squeeze out moisture)
    2 c. flour
    1 Tbsp. cinnamon
    2 tsp. baking soda
    1 tsp. salt
    1/4 tsp. baking powder
    1 c. chopped walnuts (optional)
Preparation
    Beat eggs.
    Then beat in sugar, oil and vanilla until thick. Stir in zucchini and flour (sifted with cinnamon, salt, baking powder and baking soda).
    Fold in walnuts.
    Bake for 1 hour at 350\u00b0.
    Makes 2 standard loaf pans.
