Potato Soup - cooking recipe

Ingredients
    1/2 c. salad oil
    1 c. chopped onion
    3 c. sliced, raw potatoes
    1/2 c. water
    2 tsp. salt
    1/4 tsp. pepper
    3 c. milk
    3 Tbsp. chopped parsley
Preparation
    Saute onion in oil over low heat, stirring occasionally, for about 12 to 15 minutes, until tender, but not brown.
    Add potatoes and water; cover and cook slowly until tender, about 20 minutes. Force through sieve.
    Add seasonings and milk; heat thoroughly. Just before serving, add chopped parsley.
    Makes 4 to 6 servings.
