Chicken Bombay - cooking recipe

Ingredients
    6 chicken pieces, skinned (breast or thigh)
    1/4 c. oleo
    1 Tbsp. curry powder
    1/4 tsp. ginger
    salt and pepper
    1 Granny Smith apple
    1 medium onion, chopped
    1/2 c. raisins
    2 c. cooked rice
Preparation
    Melt oleo in 2-quart oblong casserole in 350\u00b0 oven.
    Remove from oven.
    Stir in curry powder and ginger.
    Place 6 chicken pieces (thick side down) in pan.
    Season with salt and pepper. Top with onion, apple and raisins.
    Cover and bake at 350\u00b0 for 30 minutes.
    Turn chicken and cook, uncovered, until tender.
    Remove from pan.
    Add rice to sauce in pan.
    Put chicken on top of rice. Makes 6 servings.
