Plum Nectarine Vinaigrette - cooking recipe

Ingredients
    4 plums, diced
    3 nectarines, diced
    1 1/4 c. vinegar
    1/4 c. honey
    1/8 tsp. salt
    1/8 tsp. white pepper
    3/4 c. olive oil
    3 tsp. fresh minced mint
Preparation
    In a heavy saucepan, place plums, nectarines and vinegar. Cook about 10 minutes over medium heat. Cool mixture in refrigerator for about 30 minutes.
    Add fruit mixture, honey and seasonings to a food processor fitted with steel blade.
    Blend 20 to 30 seconds or until mixture is smooth.
    Slowly drizzle in the oil while motor is running.
    Process 15 to 20 seconds more.
    Whisk in fresh minced mint. Enjoy.
    Yields 4 cups.
