Carrot Cake - cooking recipe

Ingredients
    2 c. sugar
    2 c. flour
    1 1/4 c. oil
    4 eggs, lightly beaten
    1/2 c. chopped walnuts (optional)
    3 c. grated carrots
    1 1/4 tsp. baking soda
    2 tsp. cinnamon
    1 tsp. salt
    2/3 grated rind of 1 orange (use leftover 1/3 in Cream Cheese Frosting)
Preparation
    Combine
    oil and sugar.
    Add flour (with soda, cinnamon and salt)
    alternately with eggs.
    Add grated carrots, orange rind and walnuts.
    Pour
    into
    oiled
    and floured 9 x 13-inch oblong pan (a loaf or Bundt pan, if you prefer).
    Bake at 350\u00b0 for 45 minutes, or done when tested.
    Cool and top with Cream Cheese Frosting.
