Corn Fritters - cooking recipe

Ingredients
    2 eggs, beaten
    2 c. canned or fresh corn
    2 Tbsp. parsley, chopped fine
    3/4 tsp. salt
    dash of pepper
    1/2 tsp. soda
    1/2 c. fine cracker crumbs
Preparation
    Mix beaten eggs, corn, parsley, salt and pepper. Dissolve soda in 1 teaspoon warm water; add to corn mixture.
    Add crumbs and shape into cakes.
    Fry in deep fryer at 375\u00b0 until golden brown. Drain.
    Makes 12.
