Zucchini Soup - cooking recipe

Ingredients
    8 c. sliced zucchini (with skins)
    6 c. water
    6 tsp. chicken base
    1 c. chopped onion
    1 c. cream or half and half
    2 Tbsp. butter
    1 tsp. dried basil
Preparation
    Saute onion in butter for 3 minutes.
    Add zucchini, basil, water and chicken base.
    Simmer for 30 minutes or until very tender.
    Remove from heat.
    Beat soup with mixer for 1 to 2 minutes to break up zucchini.
    Add cream.
    Season with salt and pepper to taste.
    Serve hot with croutons, if desired.
