Eggplant Casserole - cooking recipe
Ingredients

1 medium sized eggplant
1 beaten egg
1/2 c. milk
2 Tbsp. melted butter
1 small onion, chopped
1 c. dry bread crumbs
1/2 c. buttered bread or Ritz cracker crumbs
1/2 c. grated Cheddar cheese
Preparation

Pare eggplant; cut in 1-inch cubes.
Cook in boiling salted water for 8 minutes; drain.
Add next 5 ingredients.
Place in greased baking dish.
Top with buttered crumbs and grated cheese. Bake in a 350\u00b0 oven for 30 minutes.
