Carrot Relish - cooking recipe

Ingredients
    1 lb. carrots
    1 fresh lemon
    1 c. sugar (more or less)
Preparation
    Grind carrots in vegetable chopper as fine as possible.
    Grind up lemon in fine pieces (including some rind).
    Add to ground carrots.
    Add 3/4 to 1 cup sugar.
    Refrigerate for about 1 hour. Serves 10 to 12.
    Also can be added to lemon jello (lots of Vitamins A and C).
