Polish Doughnuts - cooking recipe

Ingredients
    1 pt. (16 oz.) milk, scalded
    1 large cake yeast (2.0 oz.) or 4 dry yeast packets
    2 c. flour
    4 egg yolks
    1 egg
    1/2 c. sugar
    1/2 c. melted shortening
    1/2 tsp. vanilla
    1 tsp. salt
    grated rind from 1 orange or 1 1/2 tsp. orange zest
    approximately 5 c. flour
Preparation
    Scald milk and cool to 120\u00b0.
    Add yeast and 2 cups flour.
    Let this mixture stand for 1/2 hour to form a sponge.
