Ingredients

1 pastry shell, baked
2 c. skim milk
1/4 c. cornstarch
2 1/2 tsp. Sweet*10
1/4 tsp. salt
1 egg, beaten
1 1/2 tsp. vanilla
2 drops yellow food coloring
1/3 c. coconut (optional)
Preparation

Combine milk, cornstarch, Sweet*10 and salt.
Cook over low heat, stirring constantly, until mixture boils (approximately 1 minute).
Blend 1/2 cup
hot mixture into egg.
Then add the hot mixture and cook 1 minute more.
Remove from heat and add vanilla and food coloring.
Add the coconut if desired.
Pour into crust.
