Muffins By The Pailful(Hi-Fiber) - cooking recipe
Ingredients

4 c. All-Bran cereal
2 c. 100% Bran cereal
1 tsp. salt
2 c. boiling water
1 qt. buttermilk or undiluted evaporated milk
3 c. sugar (or Splenda)
1 c. shortening (butter)
4 eggs
5 c. flour, presifted
5 tsp. baking soda (if sweet milk is used use baking powder)
Preparation

Combine brans and salt in large bowl. Stir in boiling water; mix; then add buttermilk. Cool to lukewarm. In mixing bowl, cream together sugar and shortening. Add eggs one at a time, beating well after each addition. Stir into bran mixture. Let set. Combine flour and baking soda. Add to bran mixture and stir just enough to dampen ingredients. Store batter in refrigerator until ready to use. Will keep for 4 weeks.
