Basil Tomato Salad - cooking recipe

Ingredients
    2 Tbsp. olive oil
    2 Tbsp. cider vinegar
    2 tsp. chopped fresh basil leaves or 1 tsp. dried basil
    1/2 tsp. salt
    1/4 tsp. ground black pepper
    3 c. cooked rice, cooled to room temperature
    2 medium tomatoes, chopped
    1 medium cucumber, peeled, seeded and chopped
    1 small red onion, chopped
Preparation
    Whisk together oil, vinegar, basil, salt and pepper in large bowl. Add rice, tomatoes, cucumbers and onion; toss lightly. Makes 6 servings.
