Potato Soup - cooking recipe
Ingredients

1 lb. sliced bacon (crisp, keep grease)
1 c. diced yellow onion
2/3 c. flour
6 c. hot chicken stock (large can)
4 c. potatoes, baked and cut bite-size
2 c. heavy cream (whipping cream)
1/4 c. parsley
1 1/2 tsp. granulated garlic
1 1/2 tsp. dried basil
1 1/2 tsp. salt
1 1/2 tsp. red pepper sauce
1 1/2 tsp. coarse black pepper
1 c. grated Cheddar cheese
1/4 c. diced green onion
Preparation

Cook bacon and keep grease.
Cook onion in grease until clear. Remove onion.
Gradually add flour, stirring constantly to avoid lumps.
Cook until golden brown.
Add chicken stock and stir with a whisk.
Turn heat to low, add potatoes, bacon, cream and spices. Simmer 10 minutes.
Add cheese and onion.
Stir until melted. Add hot sauce to taste.
