Potato-Rice Soup - cooking recipe

Ingredients
    3 Tbsp. olive oil
    1/2 tsp. minced garlic
    4 c. chicken broth
    2 c. water
    grated Parmesan cheese
    ground beef (may be added)
    1 c. raw rice
    1 medium potato, diced
    1 medium onion, chopped
    1 Tbsp. parsley flakes
Preparation
    Heat olive oil in a saucepan over medium heat.
    Add garlic and cook until golden brown, stirring 2 or 3 times.
    Add remaining ingredients, except cheese, and bring to a boil.
    Cover and simmer 40 to 50 minutes, stirring occasionally, until rice and potato are tender.
    Serve immediately with cheese sprinkled on top in bowl.
