Rice With Mushrooms And Peas(Riso Con I Funghi E Piselli) - cooking recipe

Ingredients
    3 Tbsp. butter
    1 small onion, chopped
    1 c. long grain rice
    1 (8 oz.) can mushrooms
    10 oz. chicken broth
    1 1/4 c. water
    salt and pepper to taste
    1 (8 oz.) can small peas
Preparation
    In medium saucepan melt
    butter
    and
    saute onion until tender.
    Add rice and mushrooms;
    cook
    until half of the rice is nicely browned.
    Pour in chicken broth and water.
    Add salt and pepper to taste.
    Lower
    heat
    and
    simmer for 15 minutes. Add drained peas and cook an additional 5 to 7 minutes.
    Makes 4 servings.
    Serve immediately.
    This is wonderful served with grilled meats or skewered beef, lamb or shrimp.
