"Old Fashion Rice Custard With Less Fat" - cooking recipe

Ingredients
    1/2 c. uncooked long grain rice
    2 c. skim milk
    1 Tbsp. liquid sweetener
    4 Tbsp. sugar
    2 eggs, beaten
    2 Tbsp. Butter Buds
    1 tsp. vanilla
    2 c. skim milk
    nutmeg
Preparation
    In double boiler with water in bottom pot, cook rice with 2 cups milk.
    Stir occasionally to prevent sticking.
    Cook until rice is tender and most of the milk evaporated.
    Remove from heat; add Butter Buds.
    Stir in beaten eggs, sugar, sweetener and vanilla; stir well into the cooked rice.
    Add in the rest of the milk.
    Pour in a well-sprayed 2-quart casserole dish.
    Sprinkle with nutmeg. Bake at 350\u00b0 for 50 minutes or until firm.
