Zucchini Pie - cooking recipe
Ingredients

1 1/4 c. potato flakes
3/4 c. flour
1/2 c. grated cheese
1/3 c. soft margarine
2 c. thinly sliced zucchini
1/2 c. sliced onion
diced pepperoni
Mozzarella cheese, cut up or shredded
1/4 tsp. pepper
1/2 tsp. salt
1/2 tsp. oregano
1 (8 oz.) can tomato sauce
2 Tbsp. oil
water
Preparation

Saute zucchini and onion in oil until tender.
Add pepperoni and cook.
Stir in tomato sauce, 3/4 can water, 1/2 cup potato flakes, salt, pepper and oregano.
In bowl, combine 3/4 cup potato flakes, flour, grated cheese and salt.
Cut margarine into potato flakes in bowl; mix until crumbly.
Add water; stir dough until it holds together.
Press into bottom and sides of ungreased 9-inch pie pan or baking dish.
Spread mixture into crust.
Sprinkle Mozzarella cheese on top.
Bake in a preheated 375\u00b0 oven for 20 minutes or until done.
