Shrimp Or Chicken Curry(Microwave) - cooking recipe

Ingredients
    4 c. cooked, cleaned shrimp or chicken, cut up
    4 Tbsp. butter or oleo
    1/2 c. minced onion
    1/2 c. chopped celery
    1 1/2 Tbsp. curry powder
    6 Tbsp. flour
    1 1/2 tsp. salt
    1 1/2 tsp. sugar
    1/2 tsp. ground ginger
    1/4 tsp. black pepper
    1 c. chicken broth or 1 chicken bouillon cube dissolved in 1 c. water
    1 c. milk
    1 apple, peeled and chopped
    1 tsp. lemon juice
Preparation
    Arrange chicken in pan.
    Cover and microwave at 100% power for 20 to 25 minutes.
    Melt butter at 100% power for 1 minute.
    Saute onion, celery and curry powder in melted butter 2 to 3 minutes at 100% power.
    Blend in flour and seasonings.
    Cook at 70% power for 1 minute or until mixture is smooth and bubbly.
    Stir in chicken broth and milk.
    Microwave at 70% power for 3 to 5 minutes, until boiling.
    Stir every 2 minutes.
    Add chopped apple.
    Add chicken and lemon juice.
    Microwave at 70% power for 2 to 4 minutes. Serve over rice with condiments such as chopped tomatoes, raisins, coconut, pineapple chunks, chopped hard cooked eggs and French fried onion rings.
    Serves 8.
