Pineapple-Carrot Bread - cooking recipe

Ingredients
    3 c. flour
    2 c. sugar
    1 tsp. baking soda
    1 tsp. cinnamon
    3/4 tsp. salt
    3 eggs
    2 c. shredded carrots
    1 c. vegetable oil
    1 (8 oz.) can drained, crushed pineapple
    1 c. chopped nuts
    2 tsp. vanilla
    3/4 c. confectioners sugar (optional)
    1 to 1 1/2 tsp. milk (optional)
Preparation
    In a large bowl, combine the flour, sugar, baking soda, cinnamon and salt.
    In another bowl, beat eggs; add carrots, vegetable oil, pineapple, nuts and vanilla.
    Stir into dry ingredients just until moistened.
    Spoon into 2 greased and floured (8 x 4 x 2-inch) loaf pans.
    Bake at 325\u00b0 for 55 to 60 minutes, and test for doneness.
    Cool 10 minutes before removing from pans.
    Cool completely.
