Apple Cake - cooking recipe

Ingredients

3 c. chopped apples
3 c. all-purpose flour
3 eggs
2 c. sugar
1 1/2 c. vegetable oil
1 tsp. soda
1/2 tsp. salt
1 tsp. vanilla
1 c. nuts
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1 box confectioners sugar
1 stick margarine
juice and rind of 1 lemon

Preparation

Sift flour, soda and salt; make a well in the dry ingredients. Add sugar, eggs and oil. Beat until well blended. Add apples, nuts, vanilla and spices. Bake in loaf pan at 350\u00b0 until done. Cool and ice with confectioners sugar, margarine and juice and rind of 1 lemon.
