Camarones Burciaga - cooking recipe
Ingredients

1/4 c. olive oil
1/4 c. butter
2 bunches scallions (white and tender green parts), chopped
8 cloves garlic
2 lb. shrimp, cleaned (shell on)
1/4 c. white wine
1 1/2 Tbsp. Rose's lime juice
1 whole roasted red pepper, chopped (about 1/2 c.)
1/3 c. chopped cilantro
12 oz. pasta
Parmesan cheese
Preparation

Heat olive oil and butter in large skillet over medium heat. Saute scallions and garlic for one minute.
Add shrimp, white wine, Rose's lime juice and red pepper.
Cook over medium heat until shrimp are done (approximately 5 minutes).
Add cilantro 1 minute before cooking is completed.
Serve over cooked pasta with Parmesan cheese.
Serves four hungry people.
