Italian Pasta Sauce #2 - cooking recipe
Ingredients

1/4 c. finely chopped Spanish onion
1/4 c. chopped carrots
1 c. chopped celery
1/2 c. fresh or frozen peas (optional)
1/4 c. sliced or chopped fresh mushrooms (optional)
1 lb. ground pork, veal, chicken or beef (optional)
1/2 lb. sweet Italian sausage and 1/2 lb. hot Italian sausage (optional)
2 or 3 cloves of garlic, chopped or pressed
3 c. chopped fresh or canned tomatoes
1 tsp. dry, or 1/4 c. chopped fresh, basil
1 Tbsp. vegetable oil
Preparation

If adding meat, brown first, and then add onion, carrots, celery, (peas and/or mushrooms, if desired) and garlic in oil until soft, but not brown (about 10 minutes). Add tomatoes and basil, dry or fresh, and simmer for about 45 minutes. Serve over cooked pasta. Approximately 4 servings.
