Ma Kaylor'S Angel Food Cake - cooking recipe

Ingredients
    1 c. cake flour
    7/8 c. sugar (divided 3/4 c. plus 2 Tbsp.)
    1 1/2 c. egg whites (12 whites)
    1 1/2 tsp. cream of tartar
    1/4 tsp. salt
    1 1/2 tsp. vanilla
    1/2 tsp. almond extract
Preparation
    Measure and sift flour and sugar together three times.
    Measure egg whites and remaining ingredients into a large bowl.
    Beat until frothy.
    Add gradually 2 tablespoons at a time, 3/4 cup sugar. Beat about 10 seconds after each addition.
    Continue beating until stiff peaks are formed.
    Sift about 3 tablespoons flour over meringue and fold in.
    Repeat until all flour is folded in. Mixture will be thick.
    Place ungreased tube pan.
    Cut batter with a knife to remove air and level top until even.
    Bake at 375\u00b0 for 30 to 35 minutes.
    Immediately turn pan upside-down over a bottle and cool.
    Loosen with spatula.
