Low-Fat New England Turkey Chowder - cooking recipe

Ingredients
    1 c. celery, chopped fine
    1/2 c. chopped onions
    1 Tbsp. margarine
    2 c. turkey or chicken broth
    2 1/2 c. peeled potatoes, cut into 1/2-inch cubes
    1 tsp. salt
    1/4 tsp. white pepper
    1 dash cayenne pepper
    2 c. cooked turkey, cut into 1/2-inch cubes
    2 c. cold nonfat milk
    1/4 c. cornstarch
Preparation
    In a 5-quart pan, over medium-high heat, saute celery and onions in margarine for 2 to 3 minutes, or until vegetables are tender-crisp.
    Add broth, potatoes, salt, white pepper and cayenne pepper.
    Bring to a boil.
    Reduce heat to low.
    Once mixture is at a simmer, cover and cook 8 to 10 minutes or until potatoes are tender.
    Stir in the turkey.
