Eggplant Casserole - cooking recipe

Ingredients
    2 medium eggplant, peeled, chopped and boiled until tender
    1 lb. lean ground beef
    1 can Ro-Tel tomatoes
    1/2 c. chopped onions
    1/2 c. chopped celery
    1 c. chopped bell pepper
    1 clove garlic, chopped
    1 Tbsp. olive oil
    2 to 3 c. cooked rice
    onions tops and parsley to taste
    seasoning to taste
Preparation
    Heat olive oil in pot until hot.
    Brown ground beef.
    Add seasonings and cook about 10 minutes.
    Add Ro-Tel and cook five minutes.
    Add boiled eggplant and about 1 1/2 cups of water.
    Cook on low fire for about 1 hour.
