Chile Verde - cooking recipe

Ingredients
    1 pork roast (boneless) or pork steaks (5 to 6), cut up
    1 onion, chopped
    1 clove garlic, chopped or minced
    7 Anaheim chiles
    1 c. tomatoes, chopped
    salt and pepper to taste
    3 Tbsp. cooking oil
Preparation
    Brown meat, onion and spices together in a large skillet or saucepan. Leave meat drippings in pan, then sprinkle 1/2 cup flour over top of meat and mix together. Add enough water to make gravy. Add chiles and tomatoes, if used.
    Let simmer for 1 hour, stirring occasionally.
    If gravy is too thick, add water.
    If too thin, make a flour or cornstarch paste and add to gravy.
