Noodles With Spinach And Peppers - cooking recipe

Ingredients
    5 oz. noodles
    2 Tbsp. olive oil
    1 c. onion, sliced
    1 clove garlic, minced
    1 c. red bell pepper strips
    5 c. stemmed spinach leaves, washed and dried
    2 oz. grated Parmesan cheese
    salt and pepper to taste
Preparation
    Cook noodles; drain and set aside.
    In large skillet, over medium-high heat, add oil, onion and garlic.
    Saute 8 to 10 minutes.
    Stir in pepper strips.
    Saute 5 more minutes.
    Stir in spinach; cook, stirring constantly, until just wilted.
    Add pasta and Parmesan cheese.
    Add salt and pepper and toss until heated. Serves 4.
