Zucchini Relish - cooking recipe

Ingredients
    10 c. ground zucchini
    4 large onions
    1 red pepper
    3 green peppers
    2 1/2 c. vinegar
    2 tsp. celery seed
    1 tsp. nutmeg
    1 tsp. turmeric
    1/4 tsp. pepper
    2 Tbsp. cornstarch
Preparation
    Heat together vinegar, celery seed, nutmeg, turmeric, pepper and cornstarch.
    Grind together zucchini, onions and peppers. Sprinkle with 1/4 cup salt and let stand overnight.
    Drain.
    Then rinse in cold water and drain.
    Add to hot solution and simmer (do not boil) for 30 minutes.
    Put in hot jars, seal and water bath for 5 minutes.
