Zucchini Bake - cooking recipe
Ingredients

3 to 4 medium zucchini (about 5 c.), sliced
1 stick margarine
1 (16 oz.) pkg. Pepperidge Farm stuffing mix
16 oz. sour cream
1 can cream of mushroom soup
2 c. shredded carrot
1 c. chopped onion
black pepper to taste
Preparation

Parboil zucchini in salted water.
Cool.
Combine margarine and stuffing mix.
Line 9 x 13-inch pan with 1/2 stuffing mixture. Reserve rest.
Combine remaining ingredients.
Add drained and cooled zucchini.
Spread mixture over stuffing.
Spread reserved stuffing on top.
Bake at 350\u00b0 for 40 minutes.
