Honey Roasted Chicken - cooking recipe
Ingredients

1/4 to 1/2 c. margarine (your preference)
1/2 c. minced yellow onion
2 large minced garlic
1/4 c. Dijon mustard
1/2 c. mild honey
1 tsp. salt
1 tsp. curry powder
2 Tbsp. apricot preserves
handful of currants
4 lb. roasting chicken, cut into 8ths
Preparation

Melt butter.
Add onion and garlic.
Saute
3 to 5 minutes. Add mustard, honey, salt, curry, preserves and currants.
Cool sauce.
Dip chicken into sauce and place in shallow roasting pan, skin side up.
Spoon remaining sauce over chicken.
Bake at 400\u00b0 for 1 hour.
